Application
 
Food-grade anhydrous citric acid has various important functions in the food industry, as follows:
 
  1. Sour Taste Regulation: Regulate the pH value and acidity of foods and beverages, and enhance the flavor. For example, it can produce bubbles and improve the taste in carbonated beverages; inhibit microorganisms, extend the shelf life, and make the taste fresher in fruit juices; make the sweetness softer in candies and improve the flavor in yogurt.
  2. Antioxidation: Combine with metal ions to prevent food from oxidation and deterioration, and protect pigments. For instance, it can delay oxidation and rancidity in oils and fats; protect vitamin C in canned fruits; maintain the color and appearance stability in jams and beverages.
  3. Chelation: Form chelates with metal ions, remove metal ions, and stabilize the food system. Such as adjusting the coagulation in soybean products, preventing protein precipitation in dairy products, and preventing food from discoloration, off-flavor, and inner wall corrosion in canned foods.
  4. Others: React with alkaline substances in baking to make foods expand, such as making cakes fluffy; act as an activator or inhibitor of enzymes in the fermentation process, affecting the fermentation process and quality, such as adjusting the pH value of the fermentation broth and the activity of enzymes during winemaking
